An authentic made-up recipe for this ubiquitous staple food found all over BG. (serves 4-6 probably)


Продукти:
500g minced pork
500g minced beef
2 eggs
1 large onion
a handful or two of breadcrumbs
2 tsps чубрица (dried green BG herb)
salt and pepper to taste

Peel and chop the onion VERY VERY finely (probably a good job for a food processor if you have one). To make breadcrumbs, chuck an old crust into a liquidiser, whizz for 15 seconds while shaking it.

Throw all the ingredients into a big bowl. Have your grilling tray ready, and it is probably a good idea to use foil to keep the mess down.. Wash your hands and roll your sleeves up. Now mix all the ingredients thoroughly with your hands and squidge it through your fingers repeatedly until it is an even consistency. Roughly divide it into however many kebapche you want to make. For each one, form a 1-inch diameter "sausage" using just your hands - a highly skilled job, this! If your onion pieces are too large the kebapche will tend to fall apart :-)
If its BBQ season and you have kebab sticks u could try forming them round a stick I guess.

Arrange the results on your grill tray and grill for about 5 minutes then turn them over and grill for another 5 (exact timing will depend on the power of your grill). sausage tongs are handy.
When they look ready, chop the end off one to make sure it is properly cooked.
